Made from young ginger marinated in a blend of vinegar and sugar, it adds a subtle zing that harmonizes with various sushi types, ensuring each bite is a delightful journey of flavors.

Cooking Guide: (Ginger Soy Salmon)

Ingredients:

  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 1 tablespoon sushi ginger, finely chopped
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Sushi ginger slices for garnish
  • Green onions, thinly sliced for garnish

Instructions:

  1. In a bowl, whisk together soy sauce, rice vinegar, mirin, honey, minced garlic, and chopped sushi ginger.

  2. Place salmon fillets in a shallow dish or resealable bag and pour marinade over them. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours).

  3. Preheat oven to 200°C.

  4. Heat sesame oil in an oven-safe skillet over medium-high heat.

  5. Add salmon fillets, skin-side down, and cook for 3-4 minutes until browned.

  6. Transfer skillet to the oven and cook for another 5-7 minutes, or until salmon flakes easily with a fork.

  7. Garnish with sushi ginger slices and green onions before serving.
