    Cooking Guide: (Shrimp Fried Rice)

    Ingredients:

    • 1 cup long-grain white rice (preferably day-old rice)
    • 300g shrimp
    • 2 eggs, lightly beaten
    • 1 cup mixed vegetables (peas, carrots, corn, diced bell peppers, etc.)
    • 3-4 cloves garlic, minced
    • 2 green onions, chopped
    • 2 tbs soy sauce
    • 1 tbs oyster sauce
    • 1 tbs sesame oil
    • 1 tbs vegetable oil (or any cooking oil)
    • Salt and pepper, to taste
    • Optional: sliced fresh chili peppers for heat, chopped cilantro or parsley for garnish

    Instructions:

    1. Prepare the Rice: If using day-old rice, break up any clumps with your fingers. If using freshly cooked rice, spread it out on a baking sheet and let it cool completely to avoid it becoming mushy when fried.

    2. Cooking the Shrimp and eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and season with salt and pepper. In the same skillet, add a little more oil if needed. Pour in the beaten eggs and scramble them until fully cooked. Remove from skillet and set aside with the shrimp.

    3. Stir-Fry Vegetables and Garlic: Add minced garlic to the skillet and stir-fry for about 30 seconds until fragrant. Add mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are tender-crisp.

    4. Combine Everything: Return the shrimp and eggs to the skillet. Add the cooked rice, soy sauce, oyster sauce, and sesame oil to the skillet. Stir well to combine all ingredients evenly.

    5. Finish and Serve: Stir-fry everything together for another 2-3 minutes until heated through. Taste and adjust seasoning with more soy sauce, salt, or pepper if needed. Stir in chopped green onions. Optionally, add sliced fresh chili peppers for extra heat.

    6. Garnish and Serve: Garnish with chopped cilantro or parsley if desired. Serve hot, straight from the skillet or wok.
